Polenta with Greens, Tempeh and Pesto

Healthy Oats

This is usually a breakfast recipe. My buddies do get steel cut oats at least twice a week for breakfast.

Soak 1 and 1/2 c of organic steel cut oats in about 3 cups of water the night before. In the morning cook on low for about 15 minutes. Check to make sure its not sticking to the bottom - stir! Take the pot off the stove add 2 heaping TB of coconut oil - stir and cool. Never be "stingy" on the good fats.

To serve you add (this is the portion I use for a 75lb dog):

  • Half of the cooked oats
  • 10 blueberries
  • 6 raspberries
  • 1/2 banana
  • handful of finely grated carrots
  • 1/2 c of yam - finely processed in food processor
  • 1/2 c of finely grated beets - red or golden
  • 1/2 c of processed raw kale or parsley(it s a bit like a mash)
  • 3/4 c cooked edamame and green chickpeas mash (mash as you would make mashed potatoes or use a food processor)

Additionally: Sprinkle Red Star Nutrional yeast flakes. I also add Cranimals VIBE - it is a mix of spirulina and seaweed.
